Shuixian is one of the most popular cultivars in Yancha. The leaves of Shuixian are slightly bigger than most yancha varieties and it is considered to have a soft and comfortable character combined with nice aromatics.
This tea is made from nice material, the bushes are what is called Gaocong meaning tall bush, not quite as old as a Laocong (old bush) but already older than the young bushes and adding to the tea character and mouthfeel a layer of complexity. This tea is also from an excellent location in the Zhengyan area where mineral rich soil gives tea a special flavor.
Now add to the material a good processing and you have our Horse Pillow Shuixian that combines the character of Shuixian with more layered and deep flavor notes. The result is a tea with a creamy and gentle sweetness, aromatic depth and a smooth mouthfeel that delivers a more complex flavor but still expressing the Shuixian character and fragrance. All at a relatively affordable price.

Brewing tips | This tea can be brewed normally in a gaiwan or teapot or mug but we recommend to try it simmered at least once. To prepare boiled tea just simmer a few grams of leaves in plenty of water for around 15-20 minutes (for example circa 1g/100ml but precision doesn't matter too much). After drinking half of the boiled tea the pot can be refilled and reboiled over and over gradually increasing boiling times. Both brewing methods can be combined for the same leaves trying a few infusions in the gaiwan and then moving the leaves to simmer. This tea can make many infusions therefore its recommended to have enough time to dedicate to it. |
